Simple Sides: SouthWest Loaded Cornbread

Round Two for our simple sides and this one is a treat for the whole family! And it is a great thing to take for a dish for a family get-together! I call it SouthWest Loaded Cornbread!

Cornbread is a delightful dish that adds a little something extra to every meal. When you Load It Up SouthWestern style you get way more than just a little something extra!

What You Need:

2 Boxes Jiffy Corn Muffin Mix

2 Eggs

2/3 Cup Milk

Cooked/Crumbled Bacon

Can Green Chiles (diced)

Shredded Cheese (your choice)

First start pre-heating that oven to a fresh 400 degrees. Be sure to grease/spray whatever dish you are going to use to cook it super well!

Start prepping the bacon. (I microwaved it for ease.) Be sure to let the bacon sit and get crispy to make the crumbling part a breeze. Conservative cooks would say use half a package of bacon. And that is acceptable, as it leaves the other half open for consumption while baking/waiting.

Mix together the Corn Muffin Mix according to the package. I.E. crack open the two eggs and pour in the milk. Next spoon the green chiles into the mixture and top with cheese.

Whisk together and then add on the bacon!

Once thoroughly mixed together, pour into your baking dish.

Go ahead and start the baking process. It'll take roughly 18 minutes or so. This is plenty of time to enjoy the second half of bacon while not sharing with your beloved dog. Jester here gives us a great example of such non-sharing-bacon-comsuption in action!

Once the cornbread reaches that 18 minute mark, or looks done, pull it from the oven and use a toothpick to test if it is cooked all the way through. A sticky tooth pick means it needs a little bit longer. A clean tooth pick means you still gotta let it cool but soon you will be in cornbread heaven (or cornbreaven if you like).

Well would you look at that? That's pretty neat.
