Off the Hook: Swordfish

Despite growing up in the desert, I have always loved seafood. It is one of my favorite foods. And one of my absolute favorite seafood to eat is swordfish! That stuff is the best. Whenever I can get my hands on some (at a decent price) I grab it.

One thing I love about swordfish, is that it gives me the excuse to bust out my cast-iron skillet. This is the only way that I cook the stuff. Follow my simple steps and soon you will be in billfish bliss!

What You Need:

Swordfish

Minced Garlic

Olive Oil

In a cast iron skillet, pour in some olive oil. Start heating up the pan on medium-heat and throw in a spoonful of minced garlic.

While that starts to sizzle, shake some All Purpose over both sides of the swordfish.

Once the pan has heated up and you are getting the delicious aroma of the garlic, place the swordfish directly onto the pan. Cover and cook.

After about 7 minutes, flip the steak. Cook for the same amount of time and flip again. In total you will flip the fish about four times and cook it for 20 minutes.

Use a fork to break open the fish and ensure the meat is cooked all the way through.

I served my swordfish steak with a side of green beans. I mixed in some shredded cheese and a spoonful of this Terrapin Ridge Hot Pepper Bacon Jam that I got for Christmas and damn those greens were good!

Nutritionally speaking in 3 0z of swordfish there is less than 150 calories, 7 grams of fat and 20 grams of protein.
