For the second part of the Father's Day Feast trifecta, I am going to focus on the side: potatoes. Now this recipe came from our HR Director at work, as you can very well guess I'm in her office just about every other day, who was adamant about me trying it. Super simple and super affordable as well! Here it is:
Potatoes (I used small red and yellows)
Olive Oil
Lipton Recipe Secrets Onion packet
Toss potatoes into a gallon bag.
Drizzle in some olive oil.
Pour in onion packet.
Mix together.
Cook at 350-degrees for 45 minutes.
Toss/turn half-way through.
Now I put mine on the Traeger, as I was using that for other parts of the meal. I like to deviate from recipes, but considering this was an HR "issue" I figured I should stick to the book. And honestly, they were great! Very tasty and just so easy. With me having to really manage the tomahawk steak it was nice not having to be so involved in this side dish.
The great thing is that you can really mess around with this to make it your own. Maybe sprinkle in some Hint of Heat to give it a little extra. Or toss in minced garlic. Honestly, my wife was puzzled when she didn't see me putting in a spoonful. You could also toss on some cheese towards the end, sprinkle bacon or whatnot. Just be sure to share your recipe when you've perfected your take on it!
