Growing up one of my favorite foods was "cheese on chips". This entailed putting cheese.... on chips. Not nachos, that would have required additional flavoring. Now that I am a grown up (still enjoying the occasional cheese on chips) I've matured to enjoy more of this world. And in this case it was some Traeger'd Tri Tip Smoked Nachos.
Ingredients
Tri Tip Steaks
Rubb(s) (Used New Expiremental One)
Tortilla Chips
Mozarella Cheese
Can of Black Beans
Can of Corn
Jar of Tostido's Enchilada Dip
Can of Green Chiles
Directions
Fire up smoker. We set ours to 225-degrees.
Rubb steak, both sides. (We put ours with some olive oil in a gallon bag and let sit for about 45 minutes).
Cook just short of desired temp and set aside to rest.
While steaks are going, cook up beans and corn together in pot (season as desired). Then strain and let cool.
On cooking sheet(s), line with tin foil and spread out tortilla chips.
Sprinkle on layer of cheese.
Then pour on black beans and corn.
Warm up enchilada dip and spoon onto chips.
Slice up steaks and sprinkle around.
Green Chiles go down right before a final layer of cheese.
Toss back onto smoker (at 375) and give 4 - 8 minutes.
